Lentils have high nutritional value,it is believed that turmeric helps to combat things like jaundice and helps liver function.It has anti inflammatory properties it helps with rheumatism and arthritis. I want to keep this at bay .

Ingredients

4 servings
  1. 1 tbspgood quality olive oil
  2. 2 smallonions very finely chopped
  3. 3/4 tspheaped ground turmeric
  4. 2 largecloves of garlic, very finely chopped or crushed
  5. 50 gramsporcine mushroom, thinly sliced
  6. 50 gramsother mushrooms, thinly sliced
  7. 250 gramssprouted puy lentils, softened sprouted lentils are easier to digest then dried ones .
  8. 1 literhomemade vegetable stock or just water
  9. 1 tbspof raspberry vinegar or juice of 1/2 a lemon to taste
  10. 1 pincheach of salt and fresh cracked pepper or to taste
  11. 1/2 tbspdried coriander
  12. 2sprigs of fresh coriander for garnish ( optional)

Cooking Instructions

    Sauté the chopped onions for bout a minute to soften them in the olive oil in a soup pan.

    Add the turmeric and the garlic, stir well into the onions . Add the mushrooms and stir again.

  3. 3

    Add the lentils and stir quickly, do not let set to bottom of pan.

  4. 4

    Add the stock and stir well, heat to boil and let simmer for about 15 minutes

    Turn off the heat add the vinegar and season with the salt, pepper and dried coriander.

  6. 6

    Put the soup into bowls and serve with fresh chopped coriander and croutons if you like.
