Ingredients

Preparation Time-24 h 15 mins,Cooking Time-45 mins

  1. 2chicken thigh & leg combined
  2. For Marination-
  3. 1 cupyogurt
  4. 10garlic cloves
  5. 1large onion chopped
  6. 3-4green chilies
  7. 1 ” ginger
  8. 2 Tbspcashew soaked for 1 hour
  9. 2 TbspChar magaz soaked for 1 hour
  10. 2 Tbsppoppy seeds
  11. For Chaap Masala
  12. 1 ” cinnamon stick
  13. 1 tspgreen cardamom
  14. 1 tspcloves
  15. 1 tspshahjeera
  16. 1/4 tspnutmeg
  17. 1 tspShahmorich or white whole pepper
  18. 1 tspJaitri
  19. for Making Chaap
  20. 2 tspChaap Masala
  21. 1 tspKashmiri red chilli powder
  22. 1/2 tspturmeric powder
  23. 2 Tbspsattu or Gram flour powder
  24. 1 tspRose Water
  25. 1 tspKewra Water
  26. 2 dropsRose Atar
  27. as per tasteSalt
  28. 1 tspsugar
  29. 2 Tbspwhite oil
  30. 2 Tbspghee
  31. 2 Tbspmilk mixed with pinch of Saffron

Cooking Instructions

Preparation Time-24 h 15 mins,Cooking Time-45 mins

    For Marination - Make small insertions on the Chicken legs and thighs.

    In a blender add poppy seeds and blend coarsely. To it add soaked cashew nuts, soaked Char Magaz, ginger, green chilies, chopped onions, and yoghurt. Blend smooth. Set aside marination paste.

    For Chaap Masala - Roast for 2 mins green cardamom, cinnamon stick, cloves, nutmeg, jaiphal, shahjeera and Shahmorich or whole white pepper. Add to a blender and blend smooth. Chaap Masala is ready

    For marinating the chicken - in a bowl add marination paste, red chilli powder, turmeric powder, 2 tsp Chaap masala, sattu, Rose water kewra water, Rose Atar, salt, sugar and oil. Whisk well.

    Add the chicken pieces and smear well. Refrigerate for 24 hours

    In a wok heat oil, ghee and add the marinated chicken pieces. On low flame fry them for 5 mins on each side. Once a little fried add the rest of the marinated masala and on low flame continue cooking covered for 35 mins

    Keep turning sides after every 5 mins. The Chaap would be done by now. Switch off the flame and keep covered for another 10 mins

  8. 8

    Serve with Biryani or Roomali Roti or Naan or Paratha and enjoy
