Makhane ke Kheer

Today is the last day of Navratri and Kheer being my favourite dessert I chose to make Kheer with Makhane or Foxnut
Cooking Instructions

In a wok heat ghee and add Makhane. On low flame roast for 3 mins until Makhane has a golden colour.

Add 4 cups milk to it and on low flame cook stirring continuously for 8 mins. Milk would be reduced a little but keep stirring and scraping the sides

Add saffron dipped in milk and continue stirring for 6 mins

Add sugar at this time and keep stirring as sugar will release water. I didn’t add the Makhane in blender as I don’t prefer but one can do that.

The Makhane is becoming thick now. Add chopped almonds, cashew nuts and raisins and stir for 2 mins. Set aside

Cool to room temperature and refrigerate for 3-4 hours

PS - Don’t stir a lot as Makhane after refrigeration would become very thick.

Plate and garnish with chopped almonds and saffron strands and enjoy
