Ingredients

  1. 1 kgbasmati rice
  2. 1/2 cupoil
  3. 3 tbspghee
  4. 2cinnamon stick
  5. 4green cardamom
  6. 3-4cloves
  7. 2bay leaves
  8. 1 tspcumin seeds
  9. 10-12green chillies
  10. 5 tspSalt or as per taste
  11. For chicken marination
  12. 1 kgchicken
  13. 2 tspred chilli powder
  14. 1/2 tspturmeric powder
  15. 2 tspgarlic paste
  16. 2 tspginger paste
  17. 1 tspcumin powder
  18. 200 gmcurd
  19. 3 tbspbarista(fried onion)
  20. 4-5green chilli crushed or paste
  21. 1lemon juice
  22. 3 tbspground masala
  23. 1.5 tspSalt or as taste
  24. as requiredSome coriander and mint
  25. For ground masala:-
  26. 2bay leaves,
  27. 5-6 pepper corns,
  28. 8-10 green cardamom,
  29. 1tsp mace
  30. 2 tspCaraway seeds,
  31. 4tsp coriander seeds,
  32. 3-4 whole dry red chill
  33. 6-7cloves,
  34. 1 black cardamom
  35. 1/2 tsp fennel seeds,
  36. 1/4 TSP nutmeg
  37. 1star anise
  38. For layering of biryani
  39. 2 tbspcoriander leaves
  40. 2 tbspmint leaves
  41. 1/2 cupbarista
  42. 1 tbspkewra water
  43. 1/2 tsporange food colour

Cooking Instructions

    First wash the chicken well.take a mixing bowl add chicken.then add red chilli powder,cumin powder,ginger garlic paste,crushed green chili,salt,fried onion,ground masala,coriander and mint leaves,lemon juice,1tbsp ghee.mix well.then add curd and mix again nicely.keep the marinated chicken in fridge for one hour.
    Take all the spices mention for ground masala in a grinding jar.grind them and make a powder.

    Rinse the rice for 3-4 times then soaked in water for half an hour.then take a wide vessel add 8 glass of water.add cumin seeds,1 bay leaf,1 cinnamon stick,2green cardamom,10-12 green chilies and salt add little ghee.boil the water the add soaked rice and cooked the rice until 80% done.then strain the rice.keep aside

    Take another vessel add oil when oil heated add the remaining whole spices saute few seconds the add marinated chicken in it.cook on high flame for 5 minutes.add little water cover and cook for 10-15 minutes on low flame.when chicken is 90% cooked turn the flame high and evaporate the moisture.turn off the flame.

    Now take a vessel add half chicken then layering with cooked rice sprinkle some barista,coriander and mint leaves.then repeat the same method.sprinkle barista and coriander and mint leaves.in a bowl take little water and add food colour.spread this colour on rice,add kewra water.cover and cook on low flame for 7-8 minute.turn off the flame.
