Phirni is a sweet pudding popular in North India, usually made by boiling milk, sugar and grounded rice. Phirni has a lovely aroma from the basmati rice and ot aromatic ingredients like saffron, rose water or cardamom powder. Adding nuts like almonds or pistachios make it more rich and flavorful.

Ingredients

  1. 1 cupBasmati Rice
  2. 1 litreMilk
  3. 1/2 cupSugar
  4. 2 tbspPistachios
  5. 1 tspKewda essence
  6. 1/2 tspSaffron strands
  7. 1/3 tspCardamom powder

Cooking Instructions

20 minutes

    Soak basmati rice for 2 hours.

    Wash and dry in air.

  3. 3

    When it becomes dry, coarsely grind in grinder.

  4. 4

    Boil milk in a pan.

  5. 5

    Add grounded rice slowly and mix well, make sure that there is no lumps.

  6. 6

    Cook on low heat till the rice is almost cooked and pudding will thicker.

    Add sugar and saffron strands.

    Now add cardamom powder and kewda essence.

  9. 9

    Switch off the flame, transfer in serving dish and garnish with chopped pistachios and saffron strands.
