Ingredients

  1. 4eggs
  2. 2potato
  3. 3 handfulsspinach
  4. As much as you like: cheese of your choice
  5. 1/2onion
  6. Tomato ketchup (optional)

Cooking Instructions

    Cut and fry potatoes, bacon and onions.

    Add cheese and salt to the eggs and mix.
    If served warm, it is interesting to add a stretchy cheese such as mozzarella, while if served cold, a cheese such as Parmigiano Reggiano goes well.

    When the potatoes and bacon are cooked, add the spinach and fry lightly until the spinach wilts.

    Add the sautéed vegetables and bacon to the egg mixture and stir.

    Heat more olive oil in a frying pan over high heat.

    When the pan is hot enough, reduce the heat to low, add 4. to the pan and stir well until the mixture is half-cooked.

    Cover by lid and cook over low heat for 5 minutes.

    Turn over and cook on low heat for 2 minutes with lid.
    When the reverse side is also cooked, it is done!
    Serve with ketchup if you like! Delicious served warm or chilled in the fridge!
