Inspired by @jnavarro orginal Spanish omelette I experimented with a different flavour combo tonight.... And it was EPIC!!!

Sweet potato, red onion and cheese Spanish omelette Tortilla

Cooking Instructions

Peel and thinly slice your sweet potatoes. And slice the red onion.

In a large pan, heat some oil over medium heat and fry potatoes and onion.

After a few minutes add a lid to your pan to allow the potatoes to slowly fry/steam in their own moisture, stirring occasionally. It takes under 10 minutes to cook. It is done once onions are fried and potatoes are soft.

Whilst this is cooking grate your cheese and set it aside. In a separate bowl whisk your eggs and set them aside.

Once potatoes are cooked remove the lid, sprinkle a little ginger, season well with sea salt and pepper.

Tip your cooked veg into the eggs, add the cheese and mix well.

On medium heat, pour all the mixture into a smaller (medium-sized) pan - this will ensure a deep Tortilla, with a soft centre.

After a few minutes of frying and the Tortilla is roughly 2/3rd cooked through, place a large plate over the pan and tip the pan upside down. Then slide the uncooked side back into the pan to continue cooking. (As pictured)

After a few minutes, gently tip the fully cooked tortilla onto a plate. Top with fresh parsley. Enjoy.
