Chicken Enchiladas

Cooking Instructions

Bake chicken until done and shred in a bowl

While chicken cooks, sauté peppers and onions

Combine chicken, rotel, sautéed peppers and onions, some shredded cheese and seasonings to a bowl and mix

Heat tortillas in microwave or in skillet until soft
- 5
Add mixture to tortillas and roll up

For the sauce:
Blend together as many chipotle’s and sauce as you’d like, sour cream, cream cheese and half the canned enchilada sauce - 7
Add the other half of the canned enchilada sauce to the bottom of a baking dish

Add the rolled enchiladas and then the blended sauce on top

Cover with the rest of the shredded cheese

Bake at 375 for 20 mins

Add lettuce, crema or sour cream, queso fresco or shredded cheese, diced tomatoes, parsley or guacamole for garnish
