As a kid growing up in Spain, my mum would have always a jar with cold Gazpacho in the fridge from June to September. It is incredibly simple to make, healthy, and refreshing. We would have it as a first dish at lunch or simply as dinner with a little bit of bread.

Ingredients

  1. 1 kgTomatoes
  2. half-peeled cucumber
  3. halfonion
  4. 1 clovegarlic
  5. 1/4green pepper
  6. 5 grsalt
  7. 30 mlcider vinegar
  8. 50 mlvirgin olive oil

    Optionally you can peel the tomatoes to make the Gazpacho smoother. To see how to peel the tomatoes you can check the tip here

    Put all ingredients in a food processor. I end up using only half onion. I used red pepper because I didn't have green pepper. You can use a little bit of bread (50gr) as well if you want to make it a bit more creamy. If you want it a bit runny, you can add 100ml of cold water.

    You can blend a few ice cubes if you want to serve it straight away. Otherwise, keep it in the fridge for a few hours until is cold. Enjoy it!
