Ingredients

2 servings
  • 200 gGround beef
  • 4 piecesCorn tortillas
  • 200 mlEnchilada sauce
  • 100 gShredded cheese (mozzarella or Mexican blend)
  • 2 tbspSour cream
  • 100 g(optional) Cooked yellow rice (side)
  • 1 tbspOil
  • 1/2 tspSalt
  • 1/4 tspPepper

Steps

  1. 1

    Cook ground beef in a pan with oil, salt, and pepper until browned.

  2. 2

    Warm tortillas slightly to make them flexible.

  3. 3

    Fill each tortilla with cooked beef, roll up, and place in a baking dish.

  4. 4

    Pour enchilada sauce over the rolled tortillas.

  5. 5

    Sprinkle shredded cheese generously on top.

  6. 6

    Bake at 180°C (350°F) for 15 minutes until cheese is melted.

  7. 7

    Serve with a dollop of sour cream and yellow rice on the side.

Tips

For extra flavor, consider adding chopped onions or bell peppers to the ground beef while cooking.
