Ingredients

4 persons
  1. 400 gpasta
  2. 4red bell pepper, cut into quarters and deseeded
  3. 1medium onion, cut into quarters
  4. 1 headgarlic, cut into halves
  5. 1 cupplant-base milk
  6. 80 gcashew nuts
  7. 35 gsun-dried tomatoes, rehydrated in warm water
  8. Juice of half a lemon
  9. 1 tspchili flakes, or less as preferred
  10. Fresh basils
  11. Toasted cashew nuts for garnish, optional
  12. Parmesan cheese

Cooking Instructions

    Place bell pepper, onion and garlic in a baking sheet, drizzle with oil and bake at 230 C for 30-45 minutes until you see some brownings.

    Place the roasted vegetables in a blender along with the other ingredients and process until smooth.

    Heat the mixture in pan, season with salt and pepper to taste, parmesan cheese then toss in the pasta. Add basils, extra parmesan cheese and toasted cashew nuts before serving.
