K-drama “Woo Young-woo” inspired Korean Kimbap

Anyone watching Netflix K-drama, “Extraordinary Attorney Woo”? 😆 It’s my favorite one in this season and Young-woo(main character’s name) eating Kimbap really made me want to eat it too!

Since my husband just came back to Bristol after 1 month today, I decided to make it! He told me that his mother used to make Kimbap for breakfast during his childhood and it’s always his favourite.

Kimbap has really great nutrition balances. We can have 5 major nutrients which are carbohydrates(rice), vitamins(carrot, spinach), protein(pork, egg), minerals(seaweed, spinach) and fat(sesame oil).

We need to prepare lots of ingredients before we can start rolling Kimbap. However, all the ingredients for the Kimpab can be eaten or used in other dishes too, so I recommend you to make all of these in slightly bigger portion.

  2. ※ I made this in much bigger portions to do batch cooking, so please adjust the amount based on your preference

  4. 1 table spoonSoy sauce
  5. 1 table spoonSugar
  6. 1 table spoonSake
  7. 1 table spoonKochujang ☆
  8. 1 table spoonKorean chilli flakes ☆
  9. 1 tea spoonDashida stock powder (optional) ☆
  10. 2Garlic cloves (grated)
  11. Sesame oil
  12. ❷ Carrot Namul
  13. 2Carrots
  14. 1 table spoonSesame oil
  15. 1/2 table spoonDashida stock powder (optional, if you don’t have, please add salt)
  16. Sesame seeds
  17. ❸ Spinach Namul
  18. 1 bunchSpinach
  19. 1 tea spoonSesame oil
  20. 1 tea spoonDashida stock powder (optional, if you don’t have, please add salt)

Cooking Instructions

    【❶ Korean style flavored minced pork】Place mined pork in a bowl and add all the ingredients with ☆ mark. Mix well with your hand. Heat some sesame oil in a pan, add grated garlic and stir fry meat until it’s well cooked!

    ※ Start cooking rice.

    【❷ Carrot Namul】Cut carrots into strips. Boil plenty of water in a pot, add some salt and cook carrots. Drain the water and mix with sesame oil, Dashida stock, salt and sesame seeds.

    【❸ Spinach Namul 】Boil plenty of water in a pot, add some salt and cook spinach for 1 minute. Drain water and cool it down in the cold water. Squeeze water and mix with sesame oil, dashida powder, sesame seeds.

    【❹ Egg omelet】Beat eggs, add a pinch of salt. Heat oil in a hot pan, cook egg until both sides are cooked. Cut into strips.

    【❺ Korean yellow pickled radish 】Cut the radish into strips like the photo below.

    【❻ Kimchi】Cut kimchi in small pieces. I used scissors to cut.

    【❼ Rice】Add sesame oil with cooked rice and mix well.

    Now all the ingredients are ready!!

    Place a seaweed nori on a sushi rolling mat. Apply rice on 3/4 of the seaweed like in the photo below. Make sure the amont of rice are evenly placed. Add all the ingredients in the middle and have some spaces on top and bottom.

    Roll from downside and make sure all the ingredients are kept inside. The bottom edge of the seaweed will stick on the top line of the rice, which avoids Kimpab to fall apart. Tightly roll and hold with using the sushi mat.

    Cut the Kimpab roll with wet and clean knife. Tip is to clean the knife every time you cut, with a wet kitchen paper. Make sure the height of the Kimpab will be the same.

    Sprinkle some sesame seeds and ready to enjoy!
