Ingredients

  1. 1 cupuncooked quinoa, rinsed
  2. 2 cupswater
  3. 1 1/2 bunchesDino kale, center stem removed and chiffonaded
  4. 1 cupcashews, toasted and rough chopped
  5. 1red bell pepper, chopped
  6. 1/2 cupshredded carrots
  7. 1 cupdiced cucumber
  8. dressing
  9. 2 tablespoonssweet rice wine vinegar, divided
  10. 1/4 cupsoy sauce
  11. 1 tablespoonsesame oil
  12. 1/4 teaspoongrated ginger
  13. 1/8 teaspooncrushed red pepper flakes
  14. 1/4 cupchopped cilantro
  15. 2green onions, chopped
  16. salt & pepper to taste

Cooking Instructions

  1. 1

    Combine the quinoa and water, bring to a boil for 5 minutes, then reduce to a simmer for 15 minutes. Remove from heat and fluff with a fork. Let cool

    Mix the kale with 1 tablespoon rice vinegar, massaging and mixing the vinegar into the kale with your hands

  3. 3

    Mix the kale, bell pepper, carrots, cucumber, cashews, and quinoa together
