Sweet Coconut Rice

A special rice dish prepared to celebrate festivities

Ingredients

25 minutes
3 - 4 servings
  1. 1 cuprice
  2. 1 cupjaggery
  3. 1 cupfresh shredded coconut
  4. 1/4 cupghee
  5. 8-10Cashew nuts
  6. 10-12Resins
  7. 4cloves, 2 cardamom, 1 Small stick cinnamon 1/4 tsp cardamom powder
  8. 2 1/2 cupWater

Cooking Instructions

    Wash and drain rice and keep it aside for 15 minutes

  2. 2

    Keep water for boiling

  3. 3

    Keep pressure cooker on stove, add two spoons of ghee.

  4. 4

    Fry cashews till golden colour and remove in a bowl.

  5. 5

    Now add cloves, cinnamon and cardamom in the ghee. Add rice and fry for one minute

  6. 6

    Add hot water and cook till two whistles. Let the cooker fully release the pressure.

    Open the cooker and add finely cut jaggery and grated-coconut to cooked rice.

  8. 8

    Add few cashews and resins and cook for five minutes, stirring it once in a while to ensure proper mixing and melting of jaggery.

    Now add remaining ghee and mix. Mould the rice with help of a bowl. Serve with fried cashews.
