Soak raisins in lukewarm water to soften for 15 minutes. Then drain it, and pat it dry with a paper towel. The dry raisins will absorb the water from the bread dough, so don't forget to soften them.
- 3
Put bread flour, yeast, and sugar in a large bowl and stir well. Then add salt and stir.
- 4
Mix water and milk, and warm it until 30℃ / 86 F in the microwave (600 W, around 20 seconds).
Pour about 3/4 of the milk water over the flour mixture while drawing circles. Roughly mix and pour the remaining milk water over dry places, and mix roughly. - 5
Add softened butter, and use your hands to knead it until the dough comes together while pressing it against the bowl.
Use a stand mixer (I used KitchenAid) to knead it for 2 minutes at speed 3. Then knead it for 10 minutes at speed 4 until smooth and sticky. - 6
Put the dough onto a work surface, flatten it, and spread the raisins over. Fold the dough and sandwich the raisins, and knead to mix the raisins.
Put it in a lightly oiled deep-sided container or bowl. Cover the container with a lid or plastic wrap and let it rise at 35℃ / 95 F (or a warm place) for 60-90 minutes until doubled in size. - 7
Take it out on the work surface, press it to flatten, and divide it into 4 equal parts.
- 8
Gently pull each to form a landscape rectangle. Please flour the work surface if necessary.
Roll it up gently from the back toward the front while pressing lightly. Lightly pinch the seams. - 9
Lightly flour and roll gently while sometimes pulling to form a 45 cm / 17.7 inches long rope.
Use 2 ropes to a loaf of braided bread, so make 2 loaves. - 10
[Step 1]
Place 1st rope with the right side diagonally up. Then put 2nd rope on top in an "X" shape.[Step 2]
Lift the 1st rope and cross it. (Right to left, left to right, in that order) - 11
[Step 3]
The upper rope to ''the right forked space".
The far left rope to ''the right forked space". - 12
[Step 4]
The far right rope to ''the right forked space".
The far left rope to ''the right forked space".
Repeat only step 4. Finally, pinch the edges to stick together. - 13
Let it rise at 35℃ / 95 F (or a warm place) for 20-30 minutes until rises a little about 1.3 times in size. Preheat an oven to 220℃ / 428 F.
- 14
Brush on the top with egg wash. Turn down the oven to 200 ℃ / 392 F and bake it for 22 minutes until golden brown. Let it cool on a rack.

Cinnamon Raisin Bread Cinnamon Raisin Bread
Have I mentioned I’ve tried to make yeast bread over the last 35 years and failed miserably? Well, I have. I’ve followed recipes down to a T. Failure! I’m thinking I’m making it harder than it has to be. I know there’s a lot of ‘feel’ to it. I introduced my grandson to cinnamon raisin bread and the smell alone, from the toaster, was all it took to sell him hard. It’s expensive stuff right now!! 5 bucks a loaf? And the loaves are dinky. Delicious, but dinky. I went in WITHOUT a recipe except my own little quick hot roll recipe, and made 2 loaves for Pennie’s, literally. I even used whole wheat flour and golden raisins. It can be made with either flour. I like the fiber in whole wheat. SherryRandall: The Leftover Chronicles -
Doubled Raisin Bread Doubled Raisin Bread
I wanted to eat a raisin bread full of raisins! In the spring and and fall, you can follow the recipe directions and use water at the directed 90℃ temperature and cold milk.In winter, warm the milk (if you combine the warm water and milk, it should be about 25℃).In the summer, use 50 g of hot water to rehydrate the raisins and then use 50 g cold water and cold milk in the bread maker. Cute Braided Bread Cute Braided Bread
I saw this cute bread at a bakery, and I wanted to make one myself. After trial and error, I came up with this recipe. For cute braids, roll out the dough so that the center is fatter and the ends are skinnier. It is rather easier since you make it just like a regular braid. Make sure to soften the cranberries or raisins by soaking them in warm water then wipe them dry. Adjust the oven temperature as necessary for your oven. Recipe by shoken mama cookpad.japan -

Fluffy and Crisp Whole Wheat Rum Raisin Bread Fluffy and Crisp Whole Wheat Rum Raisin Bread
I love raisin bread, so I've tried making many original recipes. I found the perfect dough for rum raisins. It's really good cooled down and as it is, or warmed up in the toaster, it smells so good. You can put cream cheese on it, and it goes well with alcohol. It's my favourite standard bread. If you don't knead the dough well, it may create air pockets that will be visible after you cut it. Please knead it well. If the dough isn't proofed enough the second time, the corners of the bread won't come out sharply. It's important to make sure that it has risen enough. Cute Braided Bread Rolls Cute Braided Bread Rolls
These are easy to shape so I usually pack these in my bento lunchbox. I fill the rolls with chocolate, stewed apples, leftover kinpira burdock stir-fry, or patties. You won't be able to tell they are made with leftovers.Sprinkle with granulated sugar instead of powdered cheese if you're adding sweet fillings.I use low-fat milk, but you can use any kind of milk.Add the butter after kneading the mixture of the ingredients in your bread machine and the dough starts to come together. The dough will become smoother (add the butter 8 to 10 minutes after you start kneading). Recipe by putimiko cookpad.japan -
Waste-free Bread Rolls with Raisin Leaven Waste-free Bread Rolls with Raisin Leaven
I used to always make bread with dry yeast, but I wanted to try using natural wet yeast leavens, so I made many types of bread with natural yeast leavens. However, it is wasteful if you fail from using too much ingredients, and it all stuck to my hands no matter which recipe I used, so I came up with my own combination. Butter is in short supply today. I wanted to make a bread that tastes good with a small amount of butter, and is a straight version that even beginners will want to eat over and over again, so I thought this up.Using a domestic flour blend with about 40 g of water should be sufficient. Please decide on your own amount based on your own bread flour, climate, and humidity. Even if you let it rise the first time for longer, it will still turn into a delicious bread so long as the second rise isn't too long. Keep an eye on it during the second rise. Fluffy Chewy Soft Bread Fluffy Chewy Soft Bread
I created this recipe because I wanted to make very light and chewy bread.I think this bread is softer than baby's bum! This recipe is too easy so there are no special tips, but please handle the bread gently since freshly baked ones are very tender. If you are eating these the day after they're baked, microwave them and they'll become light and fluffy again! Cinnamon Sugar & Butter Rum Raisin Bread Cinnamon Sugar & Butter Rum Raisin Bread
When I saw the perfect rum raisins, I started to really crave some raisin bread.I decided to use the slim bread pan that I haven't taken out in awhile.Topping with butter is up to you, and of course, you can use a large bread pan if you prefer.Since I like the raisins to be slightly crushed, I add them to the bread maker during the kneading process. If you would rather keep the raisins whole, remove the dough from the bread maker and mix them in with your hands. If you don't have rum raisins, soak some raisins in hot water until they are soft. The baking time and temperature may differ depending on your oven, so adjust accordingly.
