I have a great Banana Cake recipe and it’s ‘My Legendary Banana Cake’, but the amount of the batter is not right for 12 cupcakes. I altered the recipe and made this new one that is perfect to make 12 cupcakes. You must use Very-Well-Ripe Bananas. I bake these cupcakes only when I have almost black Bananas that smell nearly fermenting.

Ingredients

12 Cupcakes
  1. 125 gSalted Regular Butter *softened
  2. 1/2 cupCaster Sugar *you can add extra 1-2 tablespoons
  3. 3large Eggs *room temperature
  4. 1& 3/4 cups Self-Raising Flour
  5. 1/4 cupMilk
  6. 2large Very-Well-Ripe Bananas *mashed

Cooking Instructions

    Preheat oven to 180℃. Line a 12-hole medium-size muffin tin with paper cases.

    Mix softened Butter and Sugar in a large bowl until creamy. Add Eggs, one at a time, mixing well. Add Self-Raising Flour & Milk, mix to combine, then add mashed Bananas and combine well.

    Spoon the mixture into paper cases. Bake for 20 to 25 minutes or until golden and cooked through. Leave in tins for 5 minutes before moving onto a wire rack to cool.
