Ingredients

2-4persons
  1. 15 PCsdeveined shrimp I rinse and devein shrimp. Set aside. I like buying head on because I boil the head then processed in a food processor, strain to get the shrimp flavor it has a lot of flavor)
  2. 1 cuppork belly boiled and sliced in cubes
  3. 1 cupboiled chicken breast sliced in cubes
  4. 1/4 cupboiled chicken or pork liver (optional)
  5. 2 PCsChinese sausage sliced (optional but I prefer to use this but not a typically used)
  6. 3 PCscrushed garlic
  7. 1/4 cupdiced sweet onion
  8. 2 tbspfish sauce (if you don’t like fish sauce just use 1 tsp Kosher salt) I like using Lorins Patis (fish sauce brand)
  9. 1 tspannato powder
  10. 1 tbspsoy sauce (I prefer Knorr seasoning from the Philippines)
  11. 1-2 tbspoil
  12. 1 cupsliced carrots
  13. 1 cupsliced red and green capsicum (or whatever is available)
  14. 1 cupgreen beans or snow peas (if you have Uric acid health problem you don’t need to add this)
  15. 2 cupscabbage
  16. 1/2 cupscallions (for garnish)
  17. 1/2 cupChinese celery
  18. 250 gramsPancit Bihon noodles (I prefer made from rice not corn starch) soak in water to rinse off any dirt. Let it soften but not over soaked set aside and let it drain
  19. Salt and pepper to taste
  20. Sliceslemon on the side when serving

Cooking Instructions

    Heat oil

    Add annato powder, garlic until lightly brown

  3. 3

    Add onions until clear

  4. 4

    Add boiled meat (you can use all the meat in the list above or whatever meat you have or prefer you can even use fried tofu to replace the meat). If you have shrimp sauté everything first and add the shrimp last until light orange.

    Add fish sauce or salt if you don’t like the smell of fish sauce

    Add the shrimp stock if any. Add your veggies you don’t want to over cook your baggies then 1-2 cups of stock. Otherwise use water. Take 2-3 cups and set aside for toppings before you add the Rice noodles

    Add Salt and pepper to taste.

    Do not OVER mix as the noodles will break apart easily.
    Do not cover your Pancit will stale

    Serve warm on a serving dish. Add the set aside toppings with scallions and serve with dinner rolls and lemon. Some have this with fried chicken, or chicken sandwich. Some top it with sliced boiled eggs.
