This tomato and onion chicken curry recipe is the easiest and simplest yet delicious recipe and can be made by anyone even the beginners. Let's start. Clean and wash the chicken and drain all the water from it. Now place it in a big bowl and add all the above-mentioned ingredients in it. You can always add more or less spices as per your taste and choice. Always take fresh thick yoghurt and beat it well before adding to the chicken. You can even skip the green chillies or add less or more.

Now coat all the pieces with the spices very well. Make sure the bones also get coated with the spices. Rub the kasuri methi between your palms then add by this it gives a wonderful taste and aroma and it's totally optional. Add 1/4 cup of oil at the time of marination and mix everything really well. Now cover it and marinate it for 30 minutes to 1 hour or if you have time in hand you can overnight marinate it. You can cook it immediately also.

You can even keep it in the freezer or deep freezer for upto 1 week. Now to cook take a deep vessel add 3/4 cup oil in it. When oil gets hot add the whole spices as it start to splutter add the marinated chicken and mix very well. Cover it and cook it on high flame for 10 minutes then lower the flame to medium high and cook it covered. Mix and saute in between so that it won't stick to the pan. When the chicken gets completely done then put the flame on high and cook it till the oil oozes out.

And the gravy gets completely cook. Now take out the excess oil you can use it later in making and non vegetable dish. Now add water in the chicken as much as you require the gravy. Cook it on a high flame and allow it boil. Once boiled lower the flame add chopped coriander leaves to it and mix it. Cook on low flame for 5 minutes and it's done. Serve hot with roti, Paratha, naan, chapati or rice or with your choice of bread.
