Ingredients

  • 1chicken, cut into 10 pieces
  • 1 tablespoonslime juice / tamarind juice
  • 1 teaspoonsalt
  • 3 tablespoonsoil
  • 2big shallots, finely sliced
  • 1-2 cmcinnamon stick
  • 2stars annise
  • 2cloves
  • 2cardamoms
  • 1 stalklemon grass, bruised
  • 1-2pandanus leaves, shredded, knotted
  • 4curry leaves
  • 500 cccoconut milk
  • 3 tablespoonsroasted shredded coconut, pounded (optional)
  • Spices (ground) :
  • 3candlenuts, roasted
  • 1 tablespoonscoriander
  • 1 teaspooncumin, roasted
  • 1 teaspoonstars anniseed
  • 1/2nutmeg
  • 10red chillies
  • 3big shallots
  • 3 clovesgarlic
  • 1 teaspoonchopped turmeric
  • 2 teaspoonchopped ginger
  • 1 tablespoonssalt

Steps

    The ingredients

    Rub chicken with lime or tamarind juice and salt, and let it stand for 15 minutes. Heat oil and saute shallots until golden brown, than add ground spices, whole spices, lemon grass, pandanus leaves, curry leaves and chicken.

    Cook for a few minutes, than add coconut milk and pounded coconut. Continue to cook, stirring from time to time until the chicken is cooked and the gravy is thick and oily.
