  • 1/2 kgchicken breast (diced)
  • 2carrots (sliced)
  • 100 grgreen peas
  • 2lemongrass
  • 4kaffir lime leaves
  • 2bay leaves
  • 1 tspsalt
  • 1/2 tsppepper
  • 1/2 tspsugar
  • 200 mlwater
  • 300 mlcoconut milk
  • 2cardamom
  • 1star anise
  • 1cinnamon stick
  • 1 tspcurry powder
  • 3 tbspcooking oil
  • Grounded spices:
  • 1/2red onion
  • 5garlic cloves
  • 5red long chili
  • 2 cmginger
  • 3 cmturmeric
  • 1 tspcumin
  • 1 tspcoriander seeds
  • 3candle nuts

Steps

  1. 1

    Ground all the grounded spices using a blender.

  2. 2

    Preheat a pot with cooking oil, add grounded spices, stir until well cooked, add lemongrass, kaffir lime leaves, cinnamon stick, bay leaves, star anise, curry powder, salt, sugar, pepper, and cardamom, mix them well.

  3. 3

    Add a water, chicken breast diced, wait until the chicken cooked well.

  4. 4

    Add sliced carrots and green peas, wait until all the vegetables cooked. Stir occasionally.

  5. 5

    Ready to serve with rice or the side.
