Ingredients

  1. For the cauliflower florets:
  2. 1medium-sized cauliflower, cut into florets
  3. 1/2 cupall-purpose flour (maida)
  4. 1/4 cupcornflour (cornstarch)
  5. 1 tbsprice flour
  6. 1 tspginger-garlic paste
  7. 1/2 tspred chili powder
  8. Salt to taste
  9. as neededWater
  10. Oil for frying
  11. For the sauce:
  12. 2 tablespoon oil
  13. 1onion, finely chopped
  14. 1bell pepper (capsicum), thinly sliced
  15. 2-3green chilies, slit lengthwise
  16. 1 tbspginger-garlic paste
  17. 2 tbspsoya sauce
  18. 1 tbsptomato ketchup
  19. 1 tbspchili sauce (adjust to taste)
  20. 1 tbspvinegar
  21. 1 tbspcornflour mixed with 2 tbsp water (cornflour slurry)
  22. Salt to taste

    In a mixing bowl, combine all-purpose flour, cornflour, rice flour, ginger-garlic paste, red chili powder, and salt. Gradually add water to make a thick batter.

    Dip the cauliflower florets in the batter, making sure they are well coated.
    Heat oil in a deep frying pan over medium-high heat. Once the oil is hot, carefully drop the battered cauliflower florets into the hot oil. Fry until they turn golden brown and crispy. Remove them from the oil and drain excess oil on paper towels. Set aside.
    In a separate pan, heat 2 tbsp oil over medium heat. Add chopped onions, sliced bell pepper, and green chilies. Sauté until the vegetables are slightly softened.

    Add ginger-garlic paste and sauté for another minute until the raw smell disappears.
    Stir in soya sauce, tomato ketchup, chili sauce, vinegar and salt.
    Add the cornflour slurry to the pan and stir continuously until the sauce thickens and coats the vegetables evenly.Add the fried cauliflower florets to the pan and toss them gently in the sauce until they are well coated.Garnish with chopped spring onions and serve hot.Enjoy your delicious Chilli Gobhi Manchurian as a snack or appetizer!
