Snowball cake

This is a play on hostess snowballs. You can cover it with coconut but I like it better to add just a drop or two of pure coconut extract to the 7 min frosting and add shaved chocolate on top. The filling for the cake is AWESOME not over sweet

Cooking Instructions

In a large bowl mix all ingredients with hand mixer 5 mins it will be very thick. Divide between two nine inch round pan spayed with Pam bake at 350 25 mins or till done. Cool completely

While cake bakes and cools in a small sauce pan mix milk and flour cook until a thick paste forms let cool to room temperature. Cream together room temperature butter, sugar and flavorings until fluffy add in flour paste and whip till light and fluffy. It's very important to have all of this at room temperature. Do not worry if the texture has a slight grainy texture this will go away.

Place a small amount of water in a double boiler as it heats to a low boil in the top pan mix all frosting ingredients on high speed one min. Place over low simmering water and whip till medium stiff peaks, remove from heat and whip 2 more mins.

Put filling between cake layers

Frost and add coconut and or chocolate shavings

Slice and enjoy!
