Apple Clafouti

A simple (and not too heavy) French dessert or breakfast that can be tossed in the oven with just a few minutes of prep! I like to think of this clafoutis as big, fat baked apple crepe ;) Technically all you need is milk, flour, eggs and sugar. You use any fruits you like- cherries, plums, pears...they all taste great!

I use a pie dish or tart pan when baking.

Ingredients

60 mins
6 servings
  1. 2Apples
  2. 1 TbspBrown sugar
  3. 2 tspFlavorful liquor such as brandy, spiced rum, or even good whiskey
  4. Optional: spices such as ground cinnamon, cardamom - 1/4 tsp each
  5. 2 tspGinger, minced or grated (optional)
  6. 3Eggs
  7. 1 cupWhole milk (240 ml)
  8. 1 tspVanilla extract
  9. 1/2 cupSugar, whatever type you like (120 ml)
  10. Salt a couple pinches
  11. 1/2 cupFlour (120 ml)
  12. to tastePowdered sugar for dusting

Cooking Instructions

60 mins
  1. 1

    Preheat oven to 350F/180C.

  2. 2

Grease your baking dish with butter.

  3. 3

Peel the apples and slice into thin wedges. Layout in your baking dish. (In this case, I halved the recipe and used a smaller tart dish).

  4. 4

Sprinkle apples with liquor (if using), some brown sugar, and spices such as cinnamon, cardamom and ginger. Add a few nuts if you want some crunch in the finished product ;) Set aside.

  5. 5

In a bowl, whisk together flour, salt, eggs, sugar, milk, and vanilla until well mixed. Don't worry if there are a few small lumps of flour.

  6. 6

    Pour batter over apples.

  7. 7

Put on center rack of oven and bake for about 45 minutes or until light brown and batter has set.

  8. 8

The clafouti will puff up like a monster pancake during the baking but it'll deflate to normal size once it cools.

  9. 9

Let cool for about 10 minutes. Sprinkle with powdered sugar if you like. I love to top this with just a bit of yogurt, or anything creamy like creme fraiche :D
