For years I often made easy shortbread biscuits for family and friends. Recently I learned this richer, more crisp recipe.The cornflour seems to make the difference. The first time I tried it I was really pleased but the aecond time it broke easily. The important I think is the heat of the oven and careful timing.

Ingredients

  1. 250 gplain flour
  2. 125 gcornflour
  3. 125 ggolden caster sugar
  4. 250 gbutter (room temp)

Cooking Instructions

    Set oven 150deg C/ gas mark2

    Cream together butter and sugar

  3. 3

    Add flours and work together with wooden spoon and thwith your hands.

  4. 4

    Roll out in 2 halves to approx cake tin size. Press into tins and prick all over.

  5. 5

    Bake 60-70 mins

  6. 6

    Cool in tin, cut into wedges and dredge with caster sugar.
