Blueberry Muffin Bundt Cake with Strudel Topping

This is a great muffin recipe. I just ran out of baking papers and decided to make cake. If using for muffins, fill muffin papers all the way to the top. Sprinkle strudel on top. Bake at 450 for 5 minutes. Reduce heat to 350 and bake 10 to 15 minutes or until toothpick test comes out clean. #cakes

Ingredients

  1. 2 1/2 cupall purpose flour
  2. 1 cupsugar
  3. 1/2 teaspoonsalt
  4. 1 tablespoonbaking powder
  5. 1 teaspoonbaking soda
  6. 1 stickbutter melted and cooled
  7. 2large eggs
  8. 1 cupbuttermilk or whole milk
  9. 1 teaspoonvanilla extract
  10. 1 1/2 cupsblueberries fresh or frozen. Thaw if frozen
  11. Strudel topping:
  12. 4 tablespoonsall purpose flour
  13. 4 tablespoonsmelted butter, cooled
  14. 1/4 cupsugar

Cooking Instructions

    Preheat oven to 450 degrees.

    Mix strudel topping and set aside.

  3. 3

    Mix flour, sugar, salt, baking soda and powder. Set aside.

    Combine eggs, 1 stick melted cooled butter, buttermilk or milk and vanilla extract.

    Mix dry ingredients with wet. Fold gently until just combined.

  6. 6

    Fold in 1 1/2 cup blueberries gently. Mixture will be thick.

    Spray bundt pan generously with non stick spray.

  8. 8

    Pour batter evenly in pan. Sprinkle strudel topping evenly over batter.

    Bake at 450 degrees for 10 minutes.

    Reduce tempreture to 350 and bake 40 to 45 minutes or until toothpick inserted comes out clean.

    Cool on pan 10 minutes then invert onto serving plate.

    Serve as is or flip over for strudel to be on top.

Fairly easy, I too didn't have a muffin pan that would fit my oven. Can't wait......
