Ingredients

6 servings
  1. 1 lbground hamburger
  2. 115oz can roasted chopped tomatoes. (can use a 29oz can of tomato sauce in place of both cans of tomatoes)
  3. 115oz can tomatoe sauce
  4. 2 tspchili powder. (season to taste)
  5. 1 tspgarlic powder (season to taste)
  6. 1 tsponion powder (season to taste)
  7. 3/4 tspcumin (season to taste)
  8. 1/2 tspblack pepper (season as taste)
  9. 115oz can black olives. (i like using small ones)
  10. 1/3 cupolive juice. (from can of olives)
  11. 16 ozfrozen corn
  12. 1 boxJiffy cornbread mix
  13. 1egg
  14. 1/2 cupmilk
  15. 1 cupshredded cheddar cheese

Cooking Instructions

    Brown hamburger over med-much heat until brown and done, drain grease,, Add tomatoes and tomatoes sauce and turn down to med,

    Add l of the seasonings, olives and olive juice, and frozen corn, let cook for about 10min, taste and adjust if needed,

    Heat oven to 400F, Grease an 8x8 or 11/2 qt cassarole dish, mix up the box of jiffy cornbread mix according to directions,

    Add hamburger mixture to pan, then drop cornbread by spoonfuls over top of the hamburger mixture covering most of top,

    sprinkle with shredded cheese, bake until cheese and corn bread are bubbly and golden brown

    if someone does not like olives I leave them whole so they can remove them, it really does taste better with the olives juice in it

    I make an extra box of cornbread to eat with on the side

I love being in the kitchen and My hubby and I love riding bikes! We do a lot of fundraising for the veterans homes in our area and other programs while we ride our bikes, thats part of what our group is all about, I have a couple auto immune diseases that can slow me down quite a bit, I have Lupus and Sclerderma to name some of what I suffer, but I keep going and will not stop I know I just have to, I have been married for 37 wonderful years to a great man, have 2 great boys and adore all my grandkids

I'm a southern girl and have always made corn bread from scratch. My first and last experience with Jiffy cornbread. So sweet it tastes like I put cake on top of the casserole. Yuck. WAY too sweet for this recipe. May try it again with crushed tortillia chips on top. Anything but a box of cornbread mix!
