Ingredients

24 servings
  1. 1 1/3 cupsall purpose flour
  2. 1 tsp.cinnamon
  3. 1 tsp.baking powder
  4. 1/2 tsp.salt
  5. 1/2 cupbrown sugar
  6. 3 tbsp.vegetable oil
  7. 2 tbsp.butter, melted
  8. 3 tbsp.milk
  9. 1 tsp.vanilla extract
  10. 1large egg, beaten
  11. 1medium zucchini, shredded

Cooking Instructions

    Preheat oven to 400°F. Grease a mini muffin tin pan and set aside. Once you shred your zucchini, blot it with a few paper towels and set it aside.

    Whisk together the flour, cinnamon, baking powder and salt in a large bowl. Set aside.

    In a separate bowl, whisk together the butter, oil, milk, vanilla and sugar.

    Add the wet mixture to the dry in batches, stirring to combine. Fold in shredded zucchini.

    Scoop batter into prepared pan. Bake for 8-10 minutes or until toothpick inserted comes out clean.
