Ingredients

  1. 1 cupfarro
  2. 3 cupwater (lightly salted)
  3. 3 tbspextra virgin olive oil
  4. 2/3 cupcarrots (2 large)
  5. 2 1/5 cupzucchini (2 medium)
  6. 1 tbspparsley
  7. 1 cuppepper (1 red bell pepper)
  8. 2 clovegarlic
  9. 1/2 cupred onion (finely chopped)
  10. 1 1/2 cupcooked cannellini beans
  11. 1 tbspparsley

Cooking Instructions

    Bring water and farro to boil, add salt to taste, then keep at simmer until water is fully absorbed.

    Meanwhile, saute the all veggies but beans and parsley in oil until tender.

    Combine all ingredients. Allow to cool then refrigerate.

    Variations: Farro has a nutty flavor and goes well with many vegetable combinations. Rather than boil, you can also saute in oil like risotto and then add broth for a richer dish.
