Ingredients

12 servings
  1. 12 largetortillas
  2. 2 lbground beef
  3. 4 1/2 tbspchili power
  4. 1 largeonion (I like the purple for this)
  5. 2 tbspminced garlic
  6. 1 canro-tel
  7. 1 largecan of Wolf brand chili, or left over home made
  8. 1salt/pepper to taste
  9. 1bell pepper
  10. 1 packages3 cheese Mexican blend

Cooking Instructions

  1. 1

    In a skillet brown beef. Half way through cooking add diced onions, bell pepper, seasonings, garlic, and ro-tel.

    Once fully cooked spoon meat mixture into tortillas, roll them up enchilada style and lay out in casserole dish.

  3. 3

    Once all are laid out cover them with chili, and cook for 15 minutes in the oven at 350°F.

    Add cheese to top and cook another 5 minutes.

    I call these encherito's because it's not quite a burrito, and not quite an enchilada.
