My husband loves Mexican food. Here's my try on copying his quick and easy enchilada recipe as well as using some tips and hints from the Food Network.

-Also use 3 small pieces of a chocolate bar or cocoa powder instead of chocolate sauce.
-Add 2 kinds of cheese to enhance the taste.
-Also try making tortillas at home. For 2 servings. Recipe by Abey's

Ingredients

2 servings
  1. 4Tortillas (17 cm)
  2. 200 gramsPork (or beef or chicken)
  3. 2Green peppers
  4. 1/2 mediumOnion
  5. 1Jalapeño pepper (or red chili pepper)
  6. 1 cloveGarlic
  7. 1Salt and pepper
  8. 1for frying Oil
  9. For the sauce:
  10. 400 gramsCanned tomato sauce
  11. 1/2 mediumGrated onion
  12. 1 tbspCumin powder
  13. 1 tbspChili powder
  14. 5shakes Dried Mexican oregano
  15. 2 tbspChocolate syrup
  16. 1 tbspSalt
  17. 1Pepper
  18. Toppings:
  19. 1Sliced black olives
  20. 1 smallTomato
  21. 200 mlPizza cheese (or cheddar)
  22. 1Fresh coriander
  23. 1Sour cream (or yogurt with lemon juice)

Cooking Instructions

    Cut the pork, bell peppers, and onion into 1 cm-wide bite-sized slices. Grate the garlic. Slice the jalapeño peppers into rounds.

    Stir-fry the vegetables etc. from Step 1 in a frying pan. Season with salt and pepper. After they are cooked, add the ingredients of the sauce in the listed order. *Taste to adjust the amount of salt.

    Lightly grease a baking dish. Fold the 4 tortillas in half and line them up. Preheat the oven to 180C/350F.

    Divide the vegetables from Step 2 into fourths. Use tongs to fill the tortillas and fold both ends. Pour the remaining sauce from Step 2 over the top.

    Top with cheese, tomato, and black olives in that order. Bake in the oven until the cheese gets bubbly (approximate 8 minutes).

    Decorate with fresh coriander and enjoy! Dish it up and serve with sour cream.

    Enjoy with salads or side vegetables.

    [My Husband's Creation] Also simple and tasty without any sauce. He's also added tomatoes into the filling as well as used them as topping.
