Ingredients

12 servings
  • 12 largetortillas
  • 2 lbground beef
  • 4 1/2 tbspchili power
  • 1 largeonion (I like the purple for this)
  • 2 tbspminced garlic
  • 1 canro-tel
  • 1 largecan of Wolf brand chili, or left over home made
  • 1salt/pepper to taste
  • 1bell pepper
  • 1 packages3 cheese Mexican blend

Steps

  1. 1

    In a skillet brown beef. Half way through cooking add diced onions, bell pepper, seasonings, garlic, and ro-tel.

  2. 2

    Once fully cooked spoon meat mixture into tortillas, roll them up enchilada style and lay out in casserole dish.

  3. 3

    Once all are laid out cover them with chili, and cook for 15 minutes in the oven at 350°F.

  4. 4

    Add cheese to top and cook another 5 minutes.

  5. 5

    I call these encherito's because it's not quite a burrito, and not quite an enchilada.
