SURPRISE! There's fish sauce in this recipe. :DThe fish sauce lends that deep, pungent, complex umami and distinct anchovy flavor you get in traditional Caesar dressing. And yes - there are anchovies in your Caesar dressing. Another surprise! You like anchovies better than you thought!And if you already knew there are anchovies in your Caesar dressing, please don't assume I underestimated your knowledge of all things Caesar dressing. I was just talking to those other people... ;)And you can omit the lemon zest if you don't like the extra lemon flavor.The day I took this pic, I used Romaine lettuce, carrots, broccoli, and tomatoes in my salad because that's what I had on hand.
