Ingredients

  1. 1avocado; diced
  2. 1 packagesof super sweet corn or fresh corn shaved from cob
  3. 1Roma tomato; diced
  4. 1onion of any variety; small dice
  5. 1drizzle olive oil
  6. 1salt and pepper
  7. 1 pinchof cayenne pepper
  8. 1 dashof apple cider vinegar
  9. 1 pinchof sugar

Cooking Instructions

    Combine ingredients in a mixing bowl. Marinate a half hour to a day.

    Variations; crispy bacon, toss with bacon fat, diced bell peppers, roasted bell peppers, arugala, spinach, beans, hot peppers, diced green chiles, shredded cheese
