Ingredients

  1. Shrimp
  2. 1 lbRaw shrimp, peeled and de-veined
  3. 1/2 tspBlack pepper
  4. 1/2 tspSalt
  5. 2 tspCurry powder
  6. Curry Sauce
  7. 1/2Green bell pepper, julienned
  8. 1/2Red bell pepper, julienned
  9. 1 smallonion, chopped
  10. 3 clovegarlic, minced
  11. 2 tbspcooking oil
  12. 1Sprig fresh thyme
  13. 1/2 tspSalt
  14. 2 tbspCoconut milk
  15. 1 tbspCurry powder
  16. 1 tbspKetchup
  17. 1/2 tspHot pepper sauce
  18. 1 tbspCornstarch
  19. 1 cupWater

Cooking Instructions

    Peel, de-vein raw shrimp and season with black pepper, salt and curry powder, set aside

    Julienne green and red bell peppers and onion; mince garlic

  3. 3

    Heat cooking oil on High in sauce pan

  4. 4

    Saute peppers, onion and garlic until onion is transparent

  5. 5

    add 1 spring of fresh thyme

  6. 6

    Reduce heat to Medium-High and add coconut milk

  7. 7

    Add salt, ketchup, hot pepper sauce and curry powder; stir

  8. 8

    Lower to Medium heat and add shrimp to vegetables and saute until shrimp begins to turn pink

  9. 9

    Mix water and cornstarch together and add to saucepan

  10. 10

    Simmer for 1 minute, or until shrimp are firm and curry sauce has thickened

  11. 11

    add salt and pepper to taste
