make a well in the middle of the flour, add egg, salt, olive oil. kneed till u have a smooth dough ball. wrap in plastic wrapper and let rest for 30 minutes. you can add herbs.

sprinkle some flour and flatten with a roller pin then cut by a knife or sprinkle flour on the machine and place in 1 the flattening side of a pasta machine and 2 the shaping side. I used the spaghetti side.

cook normally as you would any pasta or to store: untangle pasta and layer over parchment paper in a box in the freezer. to cook again do not thaw pasta. cook it straight away. smells a bit eggy but tastes really good!!!

I haven't turned back from homemade noodles since. I expanded my horizons to pasta as well, and came up with these noodles.The noodles are moistureless and made only with egg, so it gives birth to a nice texture.
