Ingredients

  1. 1 lbBoneless skinless chicken breast (chopped)
  2. 4 cupWhite Rice (cooked)
  3. 1 packages Frozen Broccoli Florets
  4. 1 canCream of Chicken soup
  5. 1/2 cancream of onion soup
  6. 1 canCheddar cheese soup
  7. 1/2 cupSharp cheddar cheese
  8. 1/2 cupShredded Monterey Jack cheese
  9. 1/2 packagesRitz Crackers (crushed)
  10. Salt
  11. Black pepper
  12. 1 tbspMinced Garlic
  13. 1 tbspOnion powder
  14. 2 tbspButter (melted)
  15. 4 tbspolive oil, extra virgin

Cooking Instructions

  1. 1

    Preheat oven @ 375°

  2. 2

    Season chicken with onion powder,salt, and black pepper

  3. 3

    In a medium saucepan, heat oil and add minced garlic. Stir for 30 secs and add seasoned chicken.

    Saute chicken for 5 mins and add Broccoli florets. Cook for 10 mins or until broccoli is tender (you may want to add a few tablespoons of water to chicken)

    In a bowl combine cooked rice cream of chicken cream of onion and cheddar cheese soup. Mix well

  6. 6

    Add cooked chicken and broccoli to rice mixure. Add sharp cheddar cheese and mix well

  7. 7

    Place into casserole dish and cover with shredded Monterey Jack cheese

  8. 8

    Add crushed crackers and pour melted butter over the top.

  9. 9

    Bake for 20 mins or until brown and bubbly

  10. 10

    And ENJOY!!!

It is super good everyone loved it I also put a picture of before it went into the oven
