Cooking Instructions

Preheat oven to 400°F

Coat baking dish with thin layer of olive oil (about one tablespoon)

Cut asparagus ends down and discard (pieces should be no more than 5")

Lay asparagus in dish as a single layer or thin layer depending on your dish size

Pour remaining olive oil over asparagus - use as much or as little as your heart desires here. If you use a small amount your asparagus will be more crisp, less and they will be softer (too much or cook too long and they can be mushy so don't make this an asparagus soup)

Sprinkle fresh garlic, garlic salt, and Parmesan cheese across the top (if making a double batch, I toss all of this through the asparagus so all pieces have ingredients on them)

Bake for about 20 minutes. Sprinkle bacon and bake 5 more minutes. (If using fresh bacon, bake the full cooking time and use less oil). Enjoy!

I tried making these without cooking the asparagus first, but it took longer to cook, and the bacon tended to burn. I tried boiling the asparagus first, but then I found that microwaving was faster, and so I came up with this recipe.Pre-cooking the asparagus and carrots in the microwave reduces the amount of frying time, so the bacon doesn't burn as easily and looks appetizing. I absolutely love this recipe. I went to Sam's Club and purchased Blue cheese for another recipe, realized I had too much blue cheese on-hand and too little time to use it all up before it went bad. Next night, preparing some asparagus and thought, "what if I sauteed some garlic, crisp some bacon, throw that on some asparagus and top with blue cheese?" Let's just say the blue cheese did not go to waste for the first time ever. This is also excellent the next day as all the flavors have set in! Brandy T.
