We visited my mum in Meru, Love that place it has all the fresh vegetables and fruit you can think of. I got so many juicy oranges, i just couldn't let the peels go to waste. I decided to do candied orange peel. I love the outcome.

Cooking Instructions

Wash the peels

Remove the inner white part, remove as much as possible.

Cut into your desired shape. I cut mine julienne.

Put them in a pan/pot/sufuria and let it boil.

Boiling gets rid of the bitter taste. I boiled mine once, you can do it twice or thrice to completely get rid of the bitterness. After every boil rinse it and boil again.

In another pot/pan/sufuria put the sugar and water and boil. Add the orange strips and let it boil for a while as you stir

Reduce the heat, the syrup will have started to thicken.

Remove and place them one at a time on a rack or parachment paper.

Don't throw away the syrup, it can be used to sweeten drinks and on baked foods.

Let it cool completely. Use it in baked foods or drinks.
