Orange Peel & Chocolate Chip Brioche

I made a whole bunch of candied orange peel from oranges so I decided to make a cake or bread! And since recently I really love chocolate with orange, I combined them both into a rich brioche dough to make a cake-like bread.
You don't need to use a muffin tray; you can bake them in any shape or size you want.

For the milk in brioche dough, the amount changes depending on the weight of the egg, so mix the ※ ingredients to make a total of 145g.
If you don't have candied peel, you can use marmalade and chocolate chips. In that case, the dough will only be slightly sweet, so you can increase the amount of sugar if you want. The baking time and temperature should be adjusted to suit your own oven. Recipe by Youtank

Ingredients

8 servings
  • 200 gramsBread (strong) flour
  • 20 gramsSugar
  • 3 gramsSalt
  • 40 gramsButter
  • 1※Egg
  • 1※Egg yolk
  • 145 grams※Milk (Combine the egg, egg yolk, and milk)
  • 3 gramsDry yeast
  • 30 gramsChocolate chips
  • 1Candied orange peel
  • 1Marmalade
  • 1☆Sliced almonds

Steps

    Make the bread dough in the bread maker. Finely chop the orange peel.

    When the bread dough is finished, lightly punch down.

    Let sit for 20 minutes. The photo shows the dough after letting it sit.

    Roll out the dough into a rectangular shape and scatter with the chocolate chips and orange peel.

    Roll up the dough. Tightly pinch closed the seam.

    Cut into 8~9 sections in sizes that match the muffin pan size.

    Grease the muffin pan or line with silicone cups. Put in the bread dough.

    Let rise a second time until double in size.

    After rising, coat the tops with the egg whites leftover from making the dough.

    Top with almond slices and orange peel and then spray with water.

    Bake in a 200°C oven for 15 minutes.

    Remove from the pan, and they're complete.

    Since I baked them in silicone cups, they can be given as gifts.
