Bon Appetit's rigatoni with easy vodka sauce recipe is one of my go-to favourites. Most importantly, because it's really delicious. Also, as it says right in the name, it's super easy to make. It's pretty amazing what a handful of basic ingredients and a shot of potato booze can create. Anyway, I decided to make it again for dinner, with a couple of modifications. First, because I didn't want to have to cook a separate meat dish to go with it, I added chicken which I fried in the pan before making the sauce. I was partway through cooking this dish when my wife came up and said, 'oh, you're making chicken hamonado.' I was actually whipping something up off the top of my head so, of course, I had to look it up right away. Turns out chicken hamonado is a Filipino recipe for chicken in pineapple sauce. It was a little weird to get this revelation from my wife, who's the non-Filipino in the family. She explained that she knew the dish because the Filipino ladies from her church used to bring it to potlucks. My version deviates quite a bit from the theirs. In fact, it probably owes more to a certain British chef -- I Jamie Oliver'd the dish by adding chili and mint. Delicious. Robert Gonzal -

Even my raw tomato-hating son can eat dishes made with canned tomatoes, so it's also a way to get him to eat tomatoes.Because the chicken is fried with a flour coating, none of the umami escapes. I like to use a wok with a non-stick coating to simmer the chicken. The amount of chicken and mushrooms varies in our house depending on who's at home the day. For 4 servings.
