Rice Flour Coconut Cookies Rice Flour Coconut Cookies
I was craving for something that has coconut flavor in the middle of the night. I had only the four ingredients in my apartment, so I decided to try baking this coconut cookies using rice flour instead of the all-purpose flour to see the difference. The cookies turned out awesome. It has rich flavor. If you don't want it to be mushy in the middle, you can reduce the amount of margarine to only half of 1/4 cup. Also, 2 tablespoons of powdered would be just fine, too. Try it! It's really yummy. It goes well with a cup of coffee or green tea. And oh, much better if you run after consuming it, too. ;) Sautta S.S. -
Okara (Soy Pulp) Coconut Cookies Okara (Soy Pulp) Coconut Cookies
I settled on this recipe after a long series of trial and error to find the right balance to eliminate the okara smell while creating a nutritious and delicious cookie. If you don't have coconut powder, they also taste great with just vanilla extract.I reduced the butter amount to 7.5 g and it still tasted good.If you don't have pancake mix, use 3 tablespoons flour and 1 teaspoon baking powder. When using coconut milk, use 40 g milk and 20 g coconut milk, and omit the coconut powder. While they are crisp once they come out of the oven, after a day, they will soften to a cake-like texture. Crispy Olive Oil Coconut Cookies Crispy Olive Oil Coconut Cookies
I wanted to make healthy cookies using olive oil, and I came up with this through a lot of trial and error. It was impossible to cut them out clean because of the coconut, so I would recommend just cutting them with a knife – it's so much easier.Extra virgin olive oil has quite a strong taste, so I think normal olive oil is best.
