The quickest way, I use to make rice pudding. It can be served hot or cold, depending how you like it. I love it when it's properly chilled and topped with a fruit compote. I topped my with a ready made mixed berries compote which I bought from Tesco. Again the consistency depends on your preference, I like mine to be not very runny or not very thick, just medium, so you can add or reduce the quantity of milk. I sometimes end up adding extra milk.

Ingredients

1 - 2 servings
  1. 1/2 cupcooked rice
  2. 1 1/4 cupdairy free milk
  3. To taste, maple syrup
  4. 1/4 tspcornflour (dissolve it in 1 tsp of dairy free milk)
  5. Pinchnutmeg and cinnamon powder
  6. Fruit compote (optional)

Cooking Instructions

    Pour the milk in a heavy base pan and bring it to boil on a medium heat.

    Add the cornflour, rice and maple syrup to the milk and cook on slow heat till it thickens, stirring occasionally. Now the consistency of the rice pudding depends on your preference, if you want it very thick, cook it till you get your preferred consistency.

    Take the pan off the heat and serve hot.

    Or if you're using a fruit compote, then chill the pudding in the fridge. When serving, top it with a fruit compote of your choice.
