Ingredients

  1. Beans topping
  2. 2 cupsfresh rajma beans/black beans (1 કપ if using dry beans)
  3. 1 cuppinto beans/tinned beas
  4. 2 tbspoil
  5. 3 tbspfinely chopped onion
  6. 3 tbspchopped green chillies or jalapeños
  7. 1 tspgarlic finely chopped
  8. 1 tspred chilli powder
  9. 1 tbsptaco seasoning
  10. Salt
  11. 3-4 tbsphot sauce (I used the ones from Taco bell)
  12. 3 tspsour cream or plain mayonnaise
  13. Veggie topping
  14. 3 tbspchopped onions
  15. 3 tbspchopped green pepper
  16. 3 tbspsweet corn
  17. 3 tbspchopped Coriendar leaves
  18. 3 tbspchopped tomatoes
  19. 1 tbsplime juice
  20. Avocado sauce (optional)
  21. 1ripe avocado
  22. 1jalapeño or a few green chillies
  23. 4 clovesgarlic
  24. 1/2 cupCoriendar leaves
  25. Salt
  26. 2 tbsplime juice
  27. To platter
  28. 180-200 grnachos/Corn chips (Dorito's or home-made)
  29. Beans topping
  30. Veggie toppingavocado sauce
  31. Sour cream
  32. 1 cupMexican cheese / cheddar / gouda

Cooking Instructions

    Pressure cook fresh beans in the water slightly above the surface of the beans in the cooker. Mash them roughly.

    Heat 1 ચમચી oil in a pan and fry onion in it till it fets translucent. Add chillies/jalapeños and fry for a few seconds. Next add the cooked bean, the canned beans (or the mashed pinto beans), salt, chilli powder, cumin powder, taco seasoning, hot sauce and the sour cream.

    Combine everything very well. And cook for a few seconds. Add a Beet of water if it feels too dry and lumpy. The beans topping is ready.

    For the veggie topping, combine all the veggies in a બાઉલ, squeeze lemon and mix well. Keep aside.

    Prepare avocado sauce by soft-grinding all the ingredients in a grinder. This sauce is optional.

    To prepare the platter, first place the nachos in a baking tray. Top it up with the beans followed by half the amount of cheese, veggie, cheese again and chillies/jalapeños.

    Bake it in 200c preheated oven (top and bottom heat) only till the cheese melts. Do not wait for the brown spots on the cheese. Remove the tray from the oven.

    You can now garnish with chilli sauce, avocado sauce, sour cream etc. If you want to do a criss cross pattern with the sauces, just put the sauce in the piping bag and do the desired pattern.

    Serve immediately. The nachos tend to get soggy if stayed over.
