  1. ➡️Vegetables
  2. 1Eggplant Large
  3. 1small Zucchini
  4. 4medium size potatoes
  5. 2 tbspOlive Oil
  6. 1/2teaspoon salt and pepper
  7. ➡️ Tomato sauce
  8. 1chopped onion
  9. 1chopped clove garlic
  10. 1/2teaspoon Oregano, cinnamon
  11. 1/4teaspoon Nutmeg
  12. 2chopped tomato
  13. 1/2teaspoon salt and pepper
  14. 1 tbspOlive Oil
  15. ➡️Béchamel Sauce
  16. 4 tbspButter Unsalted
  17. 5 tbspFlour All-purpose
  18. 3cup milk
  19. 1/2teaspoon salt and pepper
  20. 1/2cup Parmesan Cheese

    Cut the round shape eggplant, potatoes and zucchini after then Sprikle the eggplant (with layers) with salt, let them at for 30 minutes. After fry the potatoes, eggplant and zucchini thoroughly. Let everything you fry rest on paper towels.

    ➡️Tomato sauce ::
    Heat up some olive oil, add onions and cook until translucent; Add garlic and cook for one more minute; Then add spices: cinnamon, nutmeg, & oregano; Add pureed tomatoes, sugar, salt and pepper. Then cover and cook for approximately 20 minutes.

    ➡️Béchamel Sauce::
    In a pot off the heat melt butter, then add flour and whisk until it thickness. Gradually start adding milk and mixing it in, until the sauce is smooth Season with salt, pepper, and nutmeg Turn off the heat.
    Add Parmesan cheese and mix well.

    ➡️Assembling the Vegetarian Moussaka:: Preheat the oven to 200°C, casserole dish, brush it with olive oil or spray with cooking spray. Add some tomoto sauce after add slices of eggplant and then add tomto sauce, top them with slices of potatoes and zucchinis, Top it all of with your béchamel sauce, Sprinkle it with some Parmesan Cheese, peper. Bake it in the oven for 25 minutes until golden brown and bubbly. Let the moussaka cool completely to set. When ready to serve.
