Knead into a dough that is not too soft nor too tough. Let it rest for 30 mins

Roll the dough into small balls and apply oil

Prep your pan. Roll the balls into round shapes (still working on the perfect circle.. Hehe..)

Transfer to the pan oiling both sides

It has been a few months since I have cooked roti but this whole wheat roti made it possible again.Chapati Roti is an authentic Indian roti eaten on a daily basis in India. It is made with whole wheat flour, coconut oil and salt. No leavening ingredients are needed.I did a modern take on baigan choka, using it as a dip. This baigan I picked from my garden and roasted it on the stove.Then peeled off the skin, threw it in the processor with 1 garlic, 2 tbsp cocconut oil and a few sprigs of parsley. Just add 2 tbsp of lemon juice to this for a Baba Ganoush dip.The chapati roti tasted great with this new model baigan choka.
