Tuttifrutti from leftover watermelon rinds

Ingredients

  1. 1 cupWatermelon rinds from1kg watermelon
  2. 1.5 cupSugar
  3. as needed drops of Food colours (red,orange, green)
  4. 2 tspvanilla essence

Cooking Instructions

    Remove the green skins from watermelon rinds & cut them into small pieces

  2. 2

    Boil 2 cup water & add watermelon rind pieces to it blanch for 2 minute

  3. 3

    Then strain the water from the watermelon rind pieces

  4. 4

    In a saucepan add sugar with 1 cup water let it boil for making sugar syrup also add vanilla essence in it

  5. 5

    Add blanched rind pieces to sugar syrup & cook for 5 minutes

  6. 6

    In three bowl add three difference food colours

  7. 7

    Now divide the rind pieces into 3 parts along with sugar syrup in three separate colour bowls

  8. 8

    Rest them for 1 hour then strain the colourful sugar syrups from the rinds & dry them in sunlight for 2 days

  9. 9

    After 2 days store them in a airtight container & place in fridge
