Fried prawns coated with salted egg yolk is another Chinese New Year favourite.
Cooking Instructions

Marinate the cleaned prawns with salt & sugar & Place the corn flour in a bowl and toss in the marinated prawns, shake off excess flour.

Heat oil in a wok.
Deep fry the prawns over high heat until just cooked, drain of excess oil and set aside. - 3
In another wok put the oil & butter add in the garlic, chillies & curry leaves & mix add in the mashed egg yolk & keep stirring until well combine & bubbles form. Add in the chicken granuals n stir.

Add in the prawns and stir gently so that they are thoroughly coated with the paste. Remove from heat and serve.
