Minestrone soup || My favourite Italian soup ❤

● This classic & healthy soup is a nice one pot meal option for light dinner too.
● Minestrone is a Italian soup made with vegetables with the addition of pasta/macaroni. Common ingredients include garlic, tomatoes, green beans, boiled kidney beans, onions, carrots, celery, pumpkin or zucchini etc.

Ingredients

3 people
  1. 5medium size Tomatoes
  2. 10Minced Garlic cloves
  3. 1finely chopped onion
  4. 1 cupboiled macaroni/pasta
  5. 1/4 cupfinely chopped red Bell Pepper
  6. 1/4 cupfinely chopped red Pumpkin
  7. 1/4 cupchopped green beans
  8. 1/4 cupchopped carrot
  9. 1/4 tspBlack pepper powder
  10. 1/2 tspItalian seasoning
  11. to tasteSalt
  12. 4 tspolive oil or butter
  13. 3.5 cupswater or broth

Cooking Instructions

    First blanch the tomatoes, this an important step to get the authentic taste to this soup. Peel tomatoes. Chop 2 tomatoes & keep 3 aside for making puree.

    Heat oil/butter in a pan. Add garlic, onion & saute for 2 mins. Then add all veggies, black pepper powder, salt and cook for 7-8 mins.

    Add chopped tomatoes, tomato puree, seasoning. Mix well and cook for another 5 mins.

    Add 3.5 cups water or broth & bring to a boil.

  5. 5

    Now add boiled macaroni/pasta or boiled kidney beans if using, mix well and again bring to a boil. Let it simmer on low heat for 7-8 mins. Adjust salt, pepper & seasoning.

    Healthy Soup is ready. Pour into soup bowls, add parmesan cheese & garnish with basil leaves(optional). Enjoy with your family!
