Cooking Instructions

First of all add yeast and sugar to a cup of warm milk. Stir lightly and allow it to prove. Combine the rest of the ingredients in a large mixing bowl and add the yeast mix into it. Make a smooth dough out of it. Knead it well for 5 minutes and cover.

Allow it to rise by keeping it in a warm place for at least 2 hours. After 2 hours, punch down the dough once and divide it into four portions. Divide further into 12 balls each. In this way we will have 48 balls out of the 4 portions.

Add cheese in each and shape them back into a ball securing each nicely. See to it that the ball is smooth and round.

Arrange them all closely just as to resemble a honeycomb. Give milk wash and sprinkle black seeds or sesame seeds on top. Keep aside for a second proofing for a further 30 minutes.

Bake in a preheated oven on 180° for 20 to 25 minutes.Make sugar syrup of one string consistency with all the ingredients listed under it. While it's still hot and just out of the oven, pour this sugar syrup on top so as to drench it completely. Enjoy!

I really liked the sweet, soft, and moist walnut bread from a bakery when I was in college. Most walnut bread is hard with a lean taste, but I really miss the bread from that bakery, and I think I have come close to the taste.Brown sugar is rich and its sweetness goes the best with walnuts, so I recommend using it the most. Tsoureki (τσουρέκι) is a sweet yeast bread that is typically served at Easter. It’s similar to a brioche since the dough is enriched with eggs, milk, and butter. I made it for my family to enjoy for Christmas!My sister-in-law married a Greek man and now lives in Athens. My husband visited them recently and brought back a loaf of tsoureki for me. After one bite, I was determined to make it since it was delicious, and because we don’t have any Greek bakeries nearby.There are three critical things to know about making authentic Greek tsoureki.1) In order to obtain the correct flavor, you need to use the specific Greek spices that are listed in step one of the recipe.2) Bread flour should be used in order to provide enough strong gluten for the dough to rise and achieve its fluffy, slightly stringy texture. If you use all-purpose flour, you’ll have to knead a lot longer to ensure sufficient gluten formation.3) Ensure that you set aside enough time for the dough to rise. Because the dough is very enriched and heavy, the yeast has to work extra hard, and the rises take quite a bit of time (which for me was 5 hours total). Be patient!I’m happy to say that the time and effort paid off. My tsoureki was the same flavor and texture as the one from Athens!!
