Buckwheat Millet Flour Roti (with Daal Masala)

Phapar ko Roti or Kutu atta ki roti is a traditional recipe of Nepal. As I stay in Kathmandu, used to prepare this roti sometimes. Buckwheat rotis are nutritious, gluten-free and surprisingly pliable. They offer a distinct robust taste and complement many curries dal, honey very well.
Buckwheat Millet Flour Roti (with Daal Masala)
Phapar ko Roti or Kutu atta ki roti is a traditional recipe of Nepal. As I stay in Kathmandu, used to prepare this roti sometimes. Buckwheat rotis are nutritious, gluten-free and surprisingly pliable. They offer a distinct robust taste and complement many curries dal, honey very well.
Cooking Instructions

In a medium bowl, combine all the ingredients. Add warm water/milk little at at a time.

Mix and knead till get a dough with elasticity. Roll out rotis.

On a hot pan roast the rotis, both sides. Each roti takes 1 to 1.5 minutes to be cooked. Extra oil or butter can be spread on both sides of the rotis. I haven't used.

I served the Phapar ko Roti with Chana daal and Papaya Curry and Salad.

I bought buckwheat flour thinking I would make buckwheat flour galette, but I didn't have a chance to make it, and I made it into cookies.Add soy milk a bit at a time as it will not mix well if you do it all at once. I like square cookies more so than round ones, so I shape into squares.
