Phapar ko Roti or Kutu atta ki roti is a traditional recipe of Nepal. As I stay in Kathmandu, used to prepare this roti sometimes. Buckwheat rotis are nutritious, gluten-free and surprisingly pliable. They offer a distinct robust taste and complement many curries dal, honey very well.

Ingredients

8 Roties
  1. 1 cupbuckwheat flour
  2. 1/2 cupor less warm water or milk
  3. 1/8 tspsalt
  4. as required Rice flour, or other gluten-free flour to dust the work surface
  5. as required Oil or butter, for brushing (optional)

Cooking Instructions

    In a medium bowl, combine all the ingredients. Add warm water/milk little at at a time.

    Mix and knead till get a dough with elasticity. Roll out rotis.

  3. 3

    On a hot pan roast the rotis, both sides. Each roti takes 1 to 1.5 minutes to be cooked. Extra oil or butter can be spread on both sides of the rotis. I haven't used.

    I served the Phapar ko Roti with Chana daal and Papaya Curry and Salad.
